Corn Allergy is, in my opinion, the most frustrating allergy to have. You must avoid not only corn on the cob, corn chowder etc, but any product that uses corn derivatives, such as corn syrup, corn starch, corn meal. Corn is even used in medicines, vitamins, toiletries, and packaging. Unfortunately it also is NOT an allergen required to be stated on packaging. Luckily I have found a few websites with a plethora of useful and sound advice for you. I will share some of what I have found on them here.
From <cornallergens.com>: “Eliminating hidden corn from a diet is the biggest challenge. For some inexplicable reason, if a food item (allergen or not) is used as part of the preparation or packaging process, it is exempt from the requirement to be listed as an ingredient, thereby “hiding” it from the consumer (think of cornmeal baked into bagel crusts but not listed in the ingredients). Over the past couple of years, milk, peanuts and eggs have gotten a bit of attention, and it is more common to see an allergen notice on prepared foods that may contain those items. An ingredient of an item being derived from corn is another way corn is hidden in our foods.”
The most common ingredients that contain hidden corn are: High Fructose Corn Syrup, Citric Acid, Dextrose, Iodized Salt, and Monosodium glutamate. You will need to be incredibly vigilant about checking ingredient labels- But even that is not enough, be persistent, contact companies, check and double check! Because, for some reason Corn is NOT required to be stated on labels YET!! -and is often hidden in products. I agree, a corn allergy is completely overwhelming. But please do not despair, many other people have this same allergy, and have done a LOT of your homework for you!! Please check out these websites!

“PLEASE NOTE: In addition to the items on this list not including everything that contains corn, not everything on this list will contain corn. It is that they can contain corn, and therefore may need to be outright avoided or used cautiously. Read more about this on the Corn Allergens as Ingredients page. The items identified with an asterisk * are the most common items that might not always contain or be derived from corn. Proceed with caution!
