Allergy-Free ‘Better than it Looks’ Banana Bread

My best friend,  who happens to be an amazing cook in my opinion, came over for a visit and I had her try a slice of this recipe I tried to create- wanting something like my mom’s banana bread, with the nutty flavor- She looked at it, and then at me, and skeptically, then took a bite-  Then she declared it  “Good, …REALLY Good!- Publish that!”   I hope you like it too!~jenny

  • 1 Cup Cybele Pascal’s baking mix [page 19].
  • 1 cup sweet white rice flour
  • 1/2 cup Amaranth Flour
  • 1/3 cup coconut flour
  • 1 tsp baking soda
  • 1 tbsp baking powder
  • 3/4 tsp xanthan powder
  • 1 very ripe banana mashed
  • 1/2 cup cinnamon applesauce
  • 1/4 cup Lighter Bake butter oil replacer
  • 1/4 corn oil
  • 1 tbsp Egg Replacer mixed with~
  • ~1/4 cup +splash[2tbsn]coconut milk
  • 1 tsp orange extract
  • 1/2 cup sugar
  • 1/3+ cup light brown sugar
  • 1 Cup shredded coconut
  • 1/2 cup golden raisins
  • 1/2 cup roasted sunflower seeds
Preheat oven to 350 degrees.
Mix dry ingredients in bowl and set aside. In stand mixer mix wet ingredients then add in flour mixture- pour into greased 9-5 inch bread pan [I use corn oil in sprayer].  Sprinkle top with cinnamon sugar.
Bake 50mins-55 hour ~ done when toothpick comes out clean.  I have refrigerated it and I actually think this tastes better the next day!~
