Cherry Pie for PI- Day

In celebration of PI-Day 3.1415… I am going to share one of my favorite recipes! My mom was a fabulous pie maker! She loved the crust, which I confess was never really my favorite part. That is why Pumpkin Pie was always one of my favorites- only one crust! The exception to that was my mom’s cherry pie. How I loved it! She always made it with the tart sour cherries! To this day I can’t stand to eat that pre-sweetened ‘cherry pie filling’ you can buy! To make my pies safe for both my boys today, I used Cybele Pascal’s pie crust recipe in her Baker’s Handbook Cookbook- (If you don’t have a copy yet I suggest you order one!) I had to omit the cornstarch (Jacob is allergic) so I subbed with a half/half mixture of tapioca starch and potato starch. I also used corn free powdered sugar in the pie crust. If you can have almond extract- it adds a wonderful flavor to this pie, however I omit it due to treenut allergies.

Mom’s Cherry Pie

1 1/4 Cup Sugar
5 TBSN Cornstarch
1/4 tsp Cinnamon
2 16 oz cans TART Cherries packed in water
1/4 tsp almond extract (omit or use vanilla)
2 pastry pie crusts (I’ve used roll out crusts or I make Cybele Pascal’s pie crust recipe).

In a saucepan mix 3/4 Cup of Sugar, Cornstarch and Cinnamon.

Drain cherries- reserving 1 cup of the liquid to add to the sauce pan. Cook over Med-Hi heat until sauce thickens from watery cloudy mix to clear & glossy ~ Remove from heat once it when thickens and bubbly.

Add remaining 1/2 Cup Sugar, extract, and cherries. Mix together well. Place into bottom pie crust. Add top crust, cut slits to vent piecrust. I like to sprinkle top with a bit of cinnamon and sugar.

Bake in oven at 425 degrees for 15 minutes; Then reduce temperature to 350 degrees. and cook for an additional 30-45 minutes.

And I even had enough left over dough to make a second 1 crust pie~ So I opted for Colette Martin’s Chocolate Mousse pie-   FullSizeRender (5)

    I’ve been wanting to try those tart Cherries! I saw those in my grocery store! Your pie looked gorgeous! I don’t know how you do it? But, I”m glad you do and I hope healing and happiness is filling up your household.
