Chicken Ginger Soup

A great soup day~ So decided to make Jacobs favorite [and mine too!].

  • 2 boneless skinless chicken breasts, [I put them in whole, once cooked I remove and shred]
  • 2 cartons [dairy-soy-wheat-free] chicken broth
  • 1 bag baby carrots, cut in half
  • 1 bunch of celery- cut up
  • salt, pepper, ginger powder, and tsp+ of fresh minced ginger
  • 1/2+ of long grain brown rice

Onion could be added to this too- but if I hope to get my older son to eat it- I have to omit them! 😉  Enjoy!!

You can try Progresso Chicken broth, or Pacific Natural Foods, organic-free range Chicken broth. Both do have yeast in them, so if you suffer a yeast allergy these wont’t be for you. Just be aware a lot of the brands of broth DO contain wheat, soy, dairy, or all three!
