Veggie-Ham Chowder

Tonight’s dinner was a hit with both boys!~Perfect for these raw rainy Spring days!~ Hope you like it too!

  • 1 chopped onion
  • 3-4 chopped potatoes
  • 2 cans creamed corn
  • 1+ cup chopped carrots
  • 1-2 shredded zucchini [1 1/2 cup] [I usually have bags of shredded zucchini in my freezer- from summer!]
  • 1-2 cup chopped ham [deli slices cut up, ham bone pickings, or ham-steak]
  • 2+ tbsp flour [ I used Cybele Pascal’s baking mix, but use what is safe for you or what you like]
  • 1 carton [quart] rice milk
  • 2+ cups chicken broth
Saute onion in drizzle of oil over med-hi heat; add 2+ tbsp of flour mix then add chicken broth, mix well. Add rice milk, and remaining ingredients, bring to a boil, then reduce heat stirring occasionally until veggies are cooked through. Add 1 tsp each Salt, Pepper, and celery salt  or more to suite your taste- Enjoy! 🙂
