Allergen Free Wookie Cookies

I have a confession:

I am a total nerd and sci-fi geek. So I have properly raised my boys to love Harry Potter, classic Bugs Bunny, Marvel Superheroes, Guardians of the Galaxy, and of course Star Wars. (Working them up to Star Trek- my personal favorite!) So last fall when I saw these cookies on Pinterest- I knew I was going to be whipping these up for my boys in celebration of the new Star Wars: The Force Awakens movie! The original Wookie Cookie recipe from Sugared Nerd was not allergen free- so I had to make some adjustments!

I shared the pictures from our successful batch- and was encouraged to enter them into the GF Cookie Swap Contest. I was utterly shocked and surprised to learn that my cookies actually WON 2nd Place! You can listen to The Gluten Free Voice with Jules

Allergen Free Wookie Cookies

I started with some GFJules Gingerbread mix. The ingredients are: White Rice Flour, Brown Rice Flour, Modified Tapioca Starch, Cornstarch (non-GMO), Potato Starch, Corn Flour (non-GMO), Baking Powder, Salt, Cinnamon, Xanthan Gum. I love Jules mixes! Since we added corn back into my youngest's diet, I have been able to greatly expand what we use these days! This mix is so easy to whip up, and has good flavor and can be easily tweaked to keep it safe for my boys. To make these cookies here is the recipe and adjustments I made:
Ingredients
  • ¾ C Spectrum Palm Shortening
  • ½ C water
  • 1 C brown sugar
  • 1 tsp pumpkin pie spice - Instead I added: ¼ tsp allspice and clove, ½-1 tsp of cinnamon. (we avoid nutmeg).
  • 1 TBSN+ of fresh minced ginger
  • ¼ C molasses
Instructions
  1. Beat shortening with brown sugar until light & fluffy. Stir in sweeteners. Slowly stir in mix and spice, if using, adding water, as needed until dough holds together in ball. If dough is too dry, gradually add more water. Cover tightly & refrigerate at least 2 hours.
  2. Preheat oven to 325F.
  3. Divide and wrap half of dough.
  4. Roll out other half onto counter or mat dusted with rice flour.
  5. Roll dough to ⅛” thickness & cut with cookie cutters. Use a fork pressed slightly into the dough to make the "Wookie Fur" impressions
  6. Move to parchment-lined cookie sheets.
  7. Bake ~ 15-18 mins. – longer for crunchier.
  8. Repeat steps with remaining dough.
  9. Once cookies cool to decorate I melted
  10. /2-3/4 Cup of Enjoy Life Chocolate Chips melted in the microwave 1 minute to 1:30 minutes and stir.
  11. /2 cup of powdered sugar mixed with a splash of lemon juice or So Delicious coconut milk until thickish consistency.
  12. I actually use a combination of a paintbrush, a frosting tip, and toothpicks to decorate.
  13. This made 24-30ish cookies.

    Next round, I’m doing these the gluten free way. You get the mama of the year award making these. Weren’t they ridiculously fun!?
